This recipe was inspired by the appetizers we ordered at Lydia’s Restaurant, A local Kansas City restaurant owned by celebrity chef Lidia Bastianich. Some white bean dips are downright unappetizing—they can be slimy, overly salty, or flavorless—but not this one. The Kalamata olives add a welcome richness in both texture and flavor.
To prepare this recipe, you will only need a few basic ingredients—White beans (I used Cannellini white beans, but you can use Great Northern white beans, too), pitted Kalamata olives (plus a little brine), olive oil, salt and pepper, and an optional sprinkle of fresh basil. Make this white bean salsa with Kalamata olives! It’s easy to make with pantry ingredients and tastes delicious. A sprinkle of fresh basil is optional. Yields about 1 ¾ cups of salsa.

- 1 1 can (15 ounces) white beans or Great Northern beans, rinsed and dried, or 1 ½ cups baked beans
- 1 tablespoon Kalamata olive brine
- ⅔ cup Pitted Kalamata olives, well drained
- 1 1 clove of garlic, roughly chopped
- A small pinch of fine salt
- 3 tablespoons Olive oil, plus more for serving
- 10 Freshly ground black pepper rolls
- Optional garnish: a few fresh basil leaves, very thinly sliced
- To apply: CrostiniPita bread chips, croutons, or vegetables such as carrots, cucumbers, and bell peppers, for serving

- Place all ingredients in a food processor and blend until smooth.
- Taste the dish and add another pinch of salt if the flavor needs a boost. Transfer the dish to a serving bowl and cover with a light drizzle of olive oil and a sprinkle of basil, if using.
- Leftovers keep well in the refrigerator, covered, for up to 4 days.
