Make the ultimate 7-layer sauce! This sauce has a creamy, cheesy, fresh flavor that’s irresistible when you follow these simple steps. Store-bought ingredients work great. Makes about 12 servings (about 6 to 7 cups of sauce total).

- 1 Beans (15 to 16 oz.) can be refried or 2 cups Homemade refried beans*
- 1 ¼ cup light red saucedivided
- 1 teaspoon Ground cumin
- 2 medium ripe avocado
- 2 tablespoons Lemon juice (about 1 lime
- 1 1 medium jalapeno pepper, seeds and ribs removed and finely chopped (about 2 tablespoons)
- Fine salt to taste
- 1 cup sour cream
- 6 ounces Freshly grated cheddar cheese (about 1 ½ cups)
- ⅓ cup exhausted Pickled Jalapeno Pepperscoarsely chopped, or 1 1 small can (2.25 oz dry weight) drained and chopped black olives
- ⅓ cup Green onions, thinly sliced (about 2 to 3)
- ⅓ cup fresh coriander leaves
- Tortilla chips for serving

- In a bowl, mix the refried beans with 1/4 cup of the salsa and the cumin. Spread the mixture over the base of an 8-inch square baking dish.
- In another bowl, use a large fork to mash the avocado. Add the lime juice, half the minced chili pepper, and 1/4 teaspoon salt, and stir to combine. Spread the mixture evenly over the beans.
- In another bowl, mix the sour cream with the remaining chili. Season with a little salt to taste. Spread the sour cream over the beans.
- Pour the remaining sauce into a mesh strainer over the sink to remove excess moisture. Drizzle the sauce over the mixture.
- Sprinkle cheese all over, then top with drained chili, green onions and cilantro. Serve with tortilla chips.
Notes
*Homemade refried beans: After making the homemade version, you’ll have about 1/2 cup extra refried beans. Use them all to make a rich bean salsa! You can also save them as a protein booster for a future meal or enjoy them with chips.
Make it dairy-free/vegan: substitute Vegan sour cream And omit the cheddar cheese.
